Here are some quick and easy recipes to make in a dorm kitchen with common ingredients.
Microwave Quesadilla
1 8-inch flour tortilla
2 slices cheese
1/2 cup salsa
Place tortilla on microwavable plate, arrange cheese over half of tortilla. Microwave 25 to 40 seconds or until cheese begins to melt. Let stand covered one minute or until cool enough to eat. Fold in half; serve with salsa. The ultimate finger food, these quesadillas can also be served with sour cream or guacamole instead of salsa.
Chili and Rice Wraps
1 28 oz. can chili
1/2 cup water
1 cup Minute Rice
6 flour tortillas
cheddar cheese, shredded
tomatoes, chopped
green onions, sliced
In a large sauce pan, bring chili and water to a boil. Stir in Minute Rice, cover and cook on low heat for five minutes. Spoon chili mixture into tortillas. Top with cheese, tomatoes and onions if desired.
English Muffin Pizza
6 English muffins, split in half
14 oz. pizza sauce
12 oz. pepperoni, sliced
2 cups shredded mozzarella cheese
1 can (2.25-oz.) sliced black olives, drained
Preheat oven to 400 degrees. Line a baking pan or baking sheet with aluminum foil. Arrange muffin halves in baking pan and spread two to three tablespoons pizza sauce on each. Cover with pepperoni slices. Sprinkle with mozzarella cheese and olives. Bake for 10 minutes or until cheese is bubbly. Serve hot. Feel free to add your favorite pizza toppings such as mushrooms, sausage, onions, etc.
